🍳 Stuffed Tomatoes with Egg Surprise
These baked beauties are savory, cozy, and full of creamy, runny goodness. The Brunch Salt brings the whole thing to life with a punch of flavor that’s built for eggs.
🧂 Ingredients
- 3 large tomatoes
- Fresh chives, finely chopped
- 3 squares mozzarella cheese (one per tomato)
- 3 eggs
- Summa Salts Brunch Salt, to taste
- Freshly cracked pepper
- Shredded mozzarella cheese, for topping
- Olive oil, for greasing
👩🍳 Instructions
- Preheat oven to 375°F (190°C).
- Prep the tomatoes: Slice the tops off (about 1/5th down) and core out the insides. Save the tops to act as a base so the tomatoes sit flat in the baking dish.
- Add layers: Add chopped chives to the bottom of each tomato. Press in a square of mozzarella.
- Add the egg: Crack one egg into each tomato. Sprinkle generously with Brunch Salt and fresh pepper.
- Top it off: Sprinkle shredded mozzarella over the top.
- Bake: Place in a greased baking dish and bake 20–25 minutes until whites are set and yolks are slightly runny (or however you like them).
- Serve: Garnish with more chives and dig in while hot!
