🧂 Ingredients

  • 3 large tomatoes
  • Fresh chives, finely chopped
  • 3 squares mozzarella cheese (one per tomato)
  • 3 eggs
  • Summa Salts Brunch Salt, to taste
  • Freshly cracked pepper
  • Shredded mozzarella cheese, for topping
  • Olive oil, for greasing

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prep the tomatoes: Slice the tops off (about 1/5th down) and core out the insides. Save the tops to act as a base so the tomatoes sit flat in the baking dish.
  3. Add layers: Add chopped chives to the bottom of each tomato. Press in a square of mozzarella.
  4. Add the egg: Crack one egg into each tomato. Sprinkle generously with Brunch Salt and fresh pepper.
  5. Top it off: Sprinkle shredded mozzarella over the top.
  6. Bake: Place in a greased baking dish and bake 20–25 minutes until whites are set and yolks are slightly runny (or however you like them).
  7. Serve: Garnish with more chives and dig in while hot!
