Stuffed Tomato with Egg Surprise

Ingredients:

3 large tomatoes

Fresh chives, finely chopped

Mozzarella cheese, 1 square per tomato

3 eggs

Salt and pepper to taste

Shredded mozzarella cheese for topping

Olive oil for greasing the baking dish

Instructions:

Preheat the Oven:
Preheat your oven to 375°F (190°C).

Prepare Tomatoes:

Cut about 1/5th from the top of each tomato and core them, removing seeds and excess pulp. Save the parts you cut off to create a stable base for the tomatoes in the baking dish.

Layer the Ingredients:

Place a generous amount of fresh chives at the bottom of each cored tomato. Insert a square of mozzarella cheese into each tomato, on top of the chives.

Add the Egg:

Crack an egg into each tomato, making sure not to overflow. Sprinkle Brunch Summa Salts and pepper over the eggs to taste.

Top with Cheese:

Sprinkle shredded mozzarella cheese on top of each stuffed tomato.

Arrange in Baking Dish:

Grease a glass baking dish with olive oil. Place the tomatoes in the dish, making sure they sit on the parts that were cut off earlier for stability.

Bake:

Bake in the preheated oven for about 20-25 minutes or until the egg whites are set, and the yolks are still slightly runny (or to your preferred doneness).

Serve:

Carefully remove the stuffed tomatoes from the oven. Garnish with additional fresh chives or herbs if desired. Serve immediately and enjoy your unique stuffed tomato with egg surprise!
