Ingredients

  • 1 teaspoon Summa Salt’s Spicy Pickle
  • 2 large English cucumbers
  • ½ medium red onion
  • 2 tablespoons chopped fresh parsley
  • ½ lemon, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon honey (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Prep the veggies: Thinly slice cucumbers and red onion; chop parsley.
  2. Mix base: Combine cucumbers, onion, and parsley in a large bowl.
  3. Make dressing: Whisk lemon juice, olive oil, honey, Spicy Pickle salt, and black pepper.
  4. Toss: Pour dressing over veggies and toss until evenly coated.
  5. Chill: Refrigerate for at least 30 minutes to let flavors meld. Stir once or twice.
