Garlick Chicken Thighs
🍗 Garlic Herb Chicken Thighs with Mashed Potatoes
This dish is everything you want in a weeknight meal — crispy, juicy, herby chicken thighs and buttery mashed potatoes, all seasoned to perfection with our Garlic Chicken Salt.
🧄 Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tsp Garlic Chicken Salt
- 2 tbsp olive oil
- 1.5 lbs Yukon Gold potatoes, peeled and chopped
- 4 tbsp butter
- 1/4 cup milk or cream
- Chopped chives (optional)
🔥 Instructions
- Preheat oven to 425°F (218°C).
- Pat chicken thighs dry and rub with olive oil and Garlic Chicken Salt.
- Place skin-side down in a hot cast iron pan or oven-safe skillet. Sear 4–5 minutes until golden, flip, then transfer to oven.
- Roast for 20–25 minutes until internal temp hits 165°F.
- Meanwhile, boil potatoes in salted water until fork tender. Drain and mash with butter and milk. Season with more Garlic Chicken Salt to taste.
- Serve hot with chives sprinkled on top.
