🍗 Garlic Herb Chicken Thighs with Mashed Potatoes

This dish is everything you want in a weeknight meal — crispy, juicy, herby chicken thighs and buttery mashed potatoes, all seasoned to perfection with our Garlic Chicken Salt.


🧄 Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tsp Garlic Chicken Salt
  • 2 tbsp olive oil
  • 1.5 lbs Yukon Gold potatoes, peeled and chopped
  • 4 tbsp butter
  • 1/4 cup milk or cream
  • Chopped chives (optional)

🔥 Instructions

  1. Preheat oven to 425°F (218°C).
  2. Pat chicken thighs dry and rub with olive oil and Garlic Chicken Salt.
  3. Place skin-side down in a hot cast iron pan or oven-safe skillet. Sear 4–5 minutes until golden, flip, then transfer to oven.
  4. Roast for 20–25 minutes until internal temp hits 165°F.
  5. Meanwhile, boil potatoes in salted water until fork tender. Drain and mash with butter and milk. Season with more Garlic Chicken Salt to taste.
  6. Serve hot with chives sprinkled on top.
